INGREDIENTS:
2 cups cassava (manioc) meal 4 tablespoons dende (palm) oil



1 In a skillet, over low heat, toast the cassava meal until it begins to turn a very pale brown. Stir frequently so that it does not burn. Stir in the dende (palm) oil and cook until it is well blended and the mixture is bright yellow. Transfer to a serving bowl. Serve with Xinxim de Galinha (Chicken with Shrimp and Peanut Sauce), or with any meat or poultry.
