Best-Ever Cheese Noodle Kugel

INGREDIENTS:
4 cups regular or yolk-free noodles, medium or broad 10 slices thick American cheese 2 eggs
2 cups milk, skim to whole 12 ounces cottage cheese, any type



1 Preheat oven to 350 F. Grease 9x12x2-inch baking pan.
2 Cook noodles according to package directions. Rinse under cold water and drain. Set aside.
3 On a cutting board, group cheese slices into two stacks of five pieces. With a very sharp knife, cut the cheese first crosswise and then lengthwise into very small pieces. Set aside.
4 In a medium bowl, beat eggs with electric beaters for 2 minutes on high until eggs are frothy. Add milk and stir. Set aside.
5 Combine noodles, cottage cheese, and American cheese pieces. Add to egg and milk mixture, stirring well.
6 Pour into baking pan.
7 Bake uncovered for approximately 1-1/2 hours, until top is medium brown.
8 Remove from oven and let cool for 5 to 10 minutes.
9 Cut into squares, large size for main dish accompaniment or small size for appetizers.
