INGREDIENTS:
2 large, ripe tomatoes, peeled, seeded, and diced 1 ripe avocado, diced 1 cup fresh or frozen corn kernels, cooked and cooled
1/4 cup finely chopped onion 1 clove garlic, finely chopped 1 serrano or jalapeno chile, seeded and minced, or to taste
2 tablespoons chopped fresh cilantro 1/4 cup vegetable oil 1 tablespoons freshly squeezed lemon juice
salt, to taste



1 Combine all the ingredients in a serving bowl. Taste for seasoning. Serve at once.
