Mesclun and Tomato Salad with Honey-Lemon Dressing

INGREDIENTS:
1 cup olive oil 1/2 cup plus 2 tablespoons fresh lemon juice 3 tablespoons honey
1 tablespoon grated lemon peel 3 4.5-ounce bags mesclun salad mix 6 tomatoes, cut into wedges
1 red onion, very thinly sliced



1 Whisk first 4 ingredients in medium bowl to blend. Season dressing to taste with salt and pepper.
2 Mix lettuce, tomatoes and onion in large bowl. Add enough dressing to coat.
