Sharp Cheddar Cheese Biscuits

INGREDIENTS:
4 cups unbleached all purpose flour 8 teaspoons baking powder 2 teaspoons sugar
1 teaspoon salt 1 cup (2 sticks) chilled unsalted butter, cut into 1/2-inch cubes 1-3/4 cups (about) chilled whipping cream
2 cups (packed) grated sharp cheddar cheese (about 8 ounces)



1 Preheat oven to 425 F. Blend flour, baking powder, sugar and 1 teaspoon salt in processor. Add butter and cut in, using on/off turns, until mixture resembles coarse meal. Add 1-1/2 cups cream. Blend until dough comes together in moist clumps, adding more cream by tablespoonfuls if dough is dry. Transfer to large bowl; gently mix in cheese.
2 Turn dough out onto lightly floured surface. Knead dough 30 seconds to bring together. Pat out to 1-inch thickness. Using 2-inch round cookie cutter, cut out biscuits. Gather scraps, pat dough out and cut out more biscuits until all of dough is used.
3 Transfer biscuits to 2 larrge ungreased baking sheets, spacing apart. Bake until puffed and golden, about 15 minutes.
