Turkey Salad

INGREDIENTS:
3 cups cooked turkey, diced 1 can water chestnuts 1/2 cup celery, chopped
3/4 cup macadamia nuts 2 T vinegar 2 T crystallized ginger
3/4 cup mayonnaise 1 t curry powder 1 T soy sauce
1-1/2 cups pineapple, diced



1 Combine turkey, water chestnuts, celery and nuts. Add vinegar. Mix well. Add ginger. Combine mayonnaise, curry powder, and add pineapple and soy sauce. Add to turkey mixture. Mix thoroughly. Chill several hours. Serve on lettuce or in hollowed out pineapple shell.
