Cheese Soup (Caldo de Queso)

INGREDIENTS:
3 Tbsp oil 3 Tbsp flour 1/8 sm onion, diced
6 cups water 1 tsp salt 3 dashes of pepper
1/4 tsp garlic powder 3 chiles (anaheim) diced 1 cup Longhorn cheese, grated
3 medium size potatoes, diced



1 In a 2-quart cooking pot, add oil and heat. Brown flour, then add diced onions. Cook for a few minutes. Add 6 cups of water to this mixture. Stir constantly. Let boil and simmer for 10 minutes. Add salt, pepper, garlic powder and diced chiles. Set aside covered.
2 Add 1 cup of cheese to the pot. Then add diced potatoes and return to medium heat. Cook until potatoes are tender. Cheese must be completely melted. Sprinkle with pepper and serve.
