| INGREDIENTS: | ||
| 3 Tbsp oil | 3 Tbsp flour | 1/8 sm onion, diced |
| 6 cups water | 1 tsp salt | 3 dashes of pepper |
| 1/4 tsp garlic powder | 3 chiles (anaheim) diced | 1 cup Longhorn cheese, grated |
| 3 medium size potatoes, diced | ||
| 1 | In a 2-quart cooking pot, add oil and heat. Brown flour, then add diced onions. Cook for a few minutes. Add 6 cups of water to this mixture. Stir constantly. Let boil and simmer for 10 minutes. Add salt, pepper, garlic powder and diced chiles. Set aside covered. |
| 2 | Add 1 cup of cheese to the pot. Then add diced potatoes and return to medium heat. Cook until potatoes are tender. Cheese must be completely melted. Sprinkle with pepper and serve. |
