Lentil Soup #2

INGREDIENTS:
2 cups uncooked, washed lentils 3 quarts cold water 1/2 lb uncooked bacon, separated slices, cut into halves
1 small onion, cut in rings 1 tsp olive oil 2 tsp salt
1 garlic clove (minced) 1 bay leaf



1 Wash lentils and soak in cold water for an hour. In a cooking pot, combine lentils, water, bacon, onion, olive oil and salt. Bring to a boil. Add garlic clove and bay leaf. Cover, simmer over reduced heat for 4 to 5 minutes until bacon is fully cooked. Remove bay leaf, season to taste and serve hot.
2 For zest, add tabasco sauce of salsa to lentil soup!
