| INGREDIENTS: | ||
| 2 cups uncooked, washed lentils | 3 quarts cold water | 1/2 lb uncooked bacon, separated slices, cut into halves |
| 1 small onion, cut in rings | 1 tsp olive oil | 2 tsp salt |
| 1 garlic clove (minced) | 1 bay leaf | |
| 1 | Wash lentils and soak in cold water for an hour. In a cooking pot, combine lentils, water, bacon, onion, olive oil and salt. Bring to a boil. Add garlic clove and bay leaf. Cover, simmer over reduced heat for 4 to 5 minutes until bacon is fully cooked. Remove bay leaf, season to taste and serve hot. |
