| INGREDIENTS: | ||
| 1 tablespoon oil | 2 to 3 garlic cloves, minced | 1 small onion, diced |
| 2 to 3 pounds chicken parts, skin removed | 1 cup couscous (millet may be substituted) | 3 cups water |
| 1 red bell pepper, thinly sliced | 1/2 teaspoon cumin | 1 teaspoon salt |
| a few drops of hot pepper sauce, optional | ||
| 1 | Heat oil in a skillet. Add garlic and onion. Cook for 2 to 3 minutes. Add chicken parts, couscous, water, bell pepper, cumin, salt, and hot pepper sauce, if desired. |
| 2 | Cover skillet and cook on low heat on top of stove for 45 to 60 minutes. Check occasionally and add more water as needed. |
