Chicken Couscous

INGREDIENTS:
1 tablespoon oil 2 to 3 garlic cloves, minced 1 small onion, diced
2 to 3 pounds chicken parts, skin removed 1 cup couscous (millet may be substituted) 3 cups water
1 red bell pepper, thinly sliced 1/2 teaspoon cumin 1 teaspoon salt
a few drops of hot pepper sauce, optional



1 Heat oil in a skillet. Add garlic and onion. Cook for 2 to 3 minutes. Add chicken parts, couscous, water, bell pepper, cumin, salt, and hot pepper sauce, if desired.
2 Cover skillet and cook on low heat on top of stove for 45 to 60 minutes. Check occasionally and add more water as needed.
