Potatoes with Bacon and Onions

INGREDIENTS:
8 large potatoes 2 medium onions, sliced 3 rashers bacon, sliced
2 Tbs fresh parsley, chopped 1 tsp paprika



1 Peel the potatoes and cut into quarters. Place them in a large pot with a good deal of water and add salt to taste. Bring to a boil, cover, reduce heat, and cook till tender, about 15 to 20 minutes.
2 Meanwhile, fry the bacon on medium till well done but not crisp. Add the sliced onions and fry till almost golden, stirring occasionally.
3 Drain the potatoes. Add the onions and bacon. Sprinkle on the parsley and paprika and season with salt and freshly ground black pepper.
