| 8 large potatoes | 2 medium onions, sliced | 3 rashers bacon, sliced |
| 2 Tbs fresh parsley, chopped | 1 tsp paprika | |
| 1 | Peel the potatoes and cut into quarters. Place them in a large pot with a good deal of water and add salt to taste. Bring to a boil, cover, reduce heat, and cook till tender, about 15 to 20 minutes. |
| 2 | Meanwhile, fry the bacon on medium till well done but not crisp. Add the sliced onions and fry till almost golden, stirring occasionally. |
| 3 | Drain the potatoes. Add the onions and bacon. Sprinkle on the parsley and paprika and season with salt and freshly ground black pepper. |
