Kublai Khan's Stir-Fry with Fiery Walnuts

INGREDIENTS:
1 pound boneless tender beef steak (sirloin, rib eye or top loin) or lamb sirloin 2 tablespoons stir-fry sauce 1 teaspoon cornstarch
2 large cloves garlic, minced 2 tablespoons vegetable oil, divided 1 medium onion, cut into 3/4-inch chunks
2 large carrots, cut into julienne strips 1 pound fresh spinach, washed and drained 1/2 pound fresh mushrooms, sliced
1/3 cup stir-fry sauce



1 Prepare Fiery Walnuts. Cut beef across grain into thin slices, then into narrow strips. Combine 2 tablespoons stir-fry sauce, cornstarch and garlic in medium bowl; stir in beef. Heat 1 tablespoon oil in hot wok or large skillet over medium-high heat. Add beef and stir-fry 1-1/2 minutes; remove. Heat remaining 1 tablespoon oil in same pan. Add onion; stir-fry 2 minutes. Add carrots; stir-fry 1 minute. Add spinach and mushrooms; stir-fry 2 minutes, or until spinach is wilted. Add beef and 1/3 cup stir-fry sauce; cook and stir only until beef and vegetables are coated with sauce and heated through. Remove from heat; stir in Fiery Walnuts and serve immediately.
2 FIERY WALNUTS: Combine 2 teaspoons vegetable oil, 1/4 teaspoon ground red pepper (cayenne) and 1/8 teaspoon salt in small skillet; heat over medium heat until hot. Add 3/4 cup walnut halves or large pieces. Cook, stirring, 1 minute, or until walnuts are coated. Turn out onto small baking sheet; spread out in single layer. Bake in 350 F oven 7 minutes, or until golden. Cool.
