Shrimp in Oyster Sauce

INGREDIENTS:
1 pound large shrimp, peeled 2-1/2 tablespoons light soy sauce 2-1/2 tablespoons dry sherry
1 teaspoon grated fresh ginger 1/4 pound coarse-ground pork peanut oil
a few sticks fresh ginger, matchstick size 2 cloves garlic, sliced 2 green onions, chopped
2 tablespoons oyster sauce 1/2 tablespoon dow see, rinsed, drained, and mashed 1 egg
pinch of brown sugar (optional)



1 Marinate the shrimp in 2 tablespoons soy sauce, 2 tablespoons sherry, and a bit of grated giner, for 15 minutes. In another bowl, marinate for the same time the pork in 1/2 tablespoon soy sauce, 1/2 tablespoon sherry, and again a bit of grated ginger.
2 Chow the pork in a bit of peanut oil in a wok or heavy frying pan. Cook it just for only a few moments, or until it changes color. Remove it, and rinse the wok. Heat the wok again, and add 2 tablespoons peanut oil. When the oil is hot, add the ginger sticks and the garlic. When they have cooked for a moment, add the drained marinated shrimp, and toss them in the hot oil. Cook for just a moment, and then add the green onions and cooked pork. Add the oyster sauce and dow see. Toss again, and add the egg to thicken the dish. You may wish to add a pinch of brown sugar to cut some of the saltiness.
