INGREDIENTS:
2 tablespoons peanut oil 2 cloves garlic, sliced tiny bit of grated fresh ginger
1 quart clams, in shells, rinsed and drained 1 tablespoon dow see 2 tablespoons sherry

1 Gather all the ingredients, and be ready to go. Place the peanut oil in a hot wok on the stove or in a large heavy kettle. Add the garlic and ginger. Add the clams in the shell, and toss them in the oil. Cover, and allow to steam for a few minutes while you rinse the dow see. Then mash the dow see, and mix it with the sherry. Pour this sauce over the clams, and toss. Cover the clams, and continue cooking until all the clams are open, about 6 minutes. Be careful not to overcook. Serve the clams in the shell.
