Cream sugar and butter together. Add eggs and vanilla. Set aside. |

In a separate bowl, combine flour, baking powder, salt, and orange rind. Add to sugar mixture and knead lightly until smooth. |

Preheat oven to 350 F. Lightly grease 2 cookie sheets. |

Roll out dough to 1/8-inch thickness and cut into 3-1/2 inch rounds. |

Put a heaping teaspoon of your favorite fruit preserve in the center of each dough round. |
