| 6 potatoes | deep fat | salt, to taste |
| 1 | Pare raw potatoes and cut in long, thin, winding ribbons. Soak 15 minutes in cold water, then dry thoroughly in a towel. Place in a wire strainer, a few at a time, and fry in deep, moderately hot fat until browned. Carefully remove from strainer, dry on absorbent paper, sprinkle with salt. Coil into nests and top with small fillets of fried fish or vegetables. |
