| 4 cups beer | 4 cups water | 2 tablespoons sugar |
| 1 tablespoon butter | 3 egg yolks | 1 cup heavy cream |
| 1 | Mix the beer with the water and bring to a boil; stir in the sugar and butter, then simmer for 1/2 hour. Beat egg yolks until frothy. Add the cream to the yolks and beat again. Gradually fold the beer mixture into the egg-cream, beating continuously. Simmer the soup for another 10 minutes. (To avoid curdling do not bring to a boil.) Serve in preheated bowls. |
