INGREDIENTS:
4 cups beer 4 cups water 2 tablespoons sugar
1 tablespoon butter 3 egg yolks 1 cup heavy cream



1 Mix the beer with the water and bring to a boil; stir in the sugar and butter, then simmer for 1/2 hour. Beat egg yolks until frothy. Add the cream to the yolks and beat again. Gradually fold the beer mixture into the egg-cream, beating continuously. Simmer the soup for another 10 minutes. (To avoid curdling do not bring to a boil.) Serve in preheated bowls.
