| INGREDIENTS: | ||
| 1 C sugar | 1 t baking powder | 2-1/2 C sifted flour |
| 1 t grated lemon rind, optional | 1 egg | 1 C soft margarine |
| 1 T lemon juice | 1 (3 oz) pkg cream cheese, softened | |
| 1 | Mix margarine and cream cheese together. Add sugar and cream thoroughly. Add egg, lemon rind, and juice. Mix Well. Mix in flour and baking powder. Chill 1/2 hour. Shape dough into 1" balls and flatten slightly after you put balls on cookie sheet. Bake at 350 for 8-10 minutes. Cool. Dip cookie into lemon glaze: 1 C powdered sugar and 2 T lemon juice. Roll in chopped pecans. |
