| INGREDIENTS: | ||
| 1/2 C cold mashed potatoes | 1/4 t salt | 4 C powdered sugar |
| 1 c peanut butter | 1/2 t vanilla | |
| 1 | Mix potatoes, vanilla, salt, and enough sugar to make mixture leave side of bowl. Divide mixture in half. Sift sugar on pastry board and roll each piced into rectangle, adding sugar as necessary to make dough-like consistency. Spread 1/2 c peanut butter on each rectangle to within 1/2 inch of edge. Roll lightly in jello roll fashion. Wrap in wax paper and refrigerate 2 hours. Then slice into 1/4 inch slices. |
