| INGREDIENTS: | ||
| 9 pickling cucumbers | 1/4 white cabbage | 1/2 red onion |
| 1 large tomato | 2 jalapeno chiles | juice from 2 grapefruits |
| juice from 2 oranges | juice from 4 limes | 1-1/2 Tbsps salt |
| 1 | Peel the cucumber and julienne. Set aside. |
| 2 | Wash cabbage well and julienne. Peel the onion and dice small. Core, seed and dice the tomato. Seed and chop the jalapeno chiles. |
| 3 | Mix all ingredients together and set aside for 30 minutes. Serve chilled. |
