Cucumber Relish (Santa Monica)

INGREDIENTS:
9 pickling cucumbers 1/4 white cabbage 1/2 red onion
1 large tomato 2 jalapeno chiles juice from 2 grapefruits
juice from 2 oranges juice from 4 limes 1-1/2 Tbsps salt



1 Peel the cucumber and julienne. Set aside.
2 Wash cabbage well and julienne. Peel the onion and dice small. Core, seed and dice the tomato. Seed and chop the jalapeno chiles.
3 Mix all ingredients together and set aside for 30 minutes. Serve chilled.
4 COOKING SECRET: The cucumber relish makes a wonderful accompaniment to seafood tacos.
