| INGREDIENTS: | ||
| 1 cup coconut milk | 3 cups cooked sticky rice | 1/4 cup palm sugar |
| 1/8 teaspoon salt | 8 to 10 banana leaves, cut into 8-inch squares | 3 ripe apple bananas, cut into 1-inch stips |
| 1 | In a saucepan combine coconut milk, sticky rice, palm sugar and salt. Cook on medium heat until thick. Place a layer, about 3x3-1/2 inch thick, of the rice mixture in the center of a banana leaf. Place a banana strip on the rice mixture, then wrap it up by lifting up 2 opposite sides of the banana leaf at a time, so the rice goes on top of the banana. Fold under the extra part of the leaf. Place in a steamer and steam for 25 minutes. Serve warm or cold. |
