| INGREDIENTS: | ||
| 3 cups chopped mangoes | 1/2 cup melted butter | 3 eggs, lightly beaten |
| 2 tablespoons molasses | 1/4 teaspoon vanilla | 3 cups flour |
| 2 teaspoons baking soda | 1 tablespoon baking powder | 1/2 teaspoon salt |
| 1/2 cup shredded coconut | 1/4 cup chopped nuts (optional) | |
| 1 | Preheat oven to 350 F. Grease and flour two 3-1/4x9x5-inch loaf pans. In a large mixing bowl combine mangoes, butter, eggs, molasses and vanilla; mix well. Stift together flour, baking soda, baking powder and salt; blend into mango mixture. Lightly stir in coconut and nuts. Pour butter into prepared loaf pans and bake for 1 hour, or until bread test done. |
