Mango Bread

INGREDIENTS:
3 cups chopped mangoes 1/2 cup melted butter 3 eggs, lightly beaten
2 tablespoons molasses 1/4 teaspoon vanilla 3 cups flour
2 teaspoons baking soda 1 tablespoon baking powder 1/2 teaspoon salt
1/2 cup shredded coconut 1/4 cup chopped nuts (optional)



1 Preheat oven to 350 F. Grease and flour two 3-1/4x9x5-inch loaf pans. In a large mixing bowl combine mangoes, butter, eggs, molasses and vanilla; mix well. Stift together flour, baking soda, baking powder and salt; blend into mango mixture. Lightly stir in coconut and nuts. Pour butter into prepared loaf pans and bake for 1 hour, or until bread test done.
