Frosted Meat Loaf

INGREDIENTS:
1/2 cup medium cracker crumbs 2 beaten eggs 1 8-ounce can tomato sauce
1/4 cup finely chopped onion 2 tablespoons chopped green pepper dash dried thyme, crushed
dash dried marjoram, crushed 1-1/2 pounds ground beef packaged instant mashed potatoes (enough for 4 servings)
1 egg, slightly beaten 1 cup cooked diced carrots



1 Combine cracker crumbs, the 2 beaten eggs, tomato sauce, onion, green pepper, 3/4 teaspoon salt, thyme, and marjoram. Add beef and mix well. Pat into 8-1/2 x 4-1/2 x 2-1/2-inch loaf dish. Bake in 350 F oven for 1-1/4 hours. Remove from oven; let stand a few minutes. Drain off excess fat. Place loaf on baking sheet.
2 Meanwhile, prepare potatoes according to package directions, omitting milk. Beat in the 1 egg. Fold in carrots. "Frost" loaf with potatoes. Bake in 400 F oven for 10 to 12 minutes.
