Candied Sweet Potatoes

INGREDIENTS:
2 medim-size sweet potatoes, peeled and cut into 1-1/2 to 2-inch chunks 1 cup water 1/4 cup sugar
1/4 cup packed light brown sugar 4 tablespoons unsalted butter, in all 1-1/2 teaspoons vanilla extract
juice and grated rind from 1/8 lemon



1 In a 1-quart saucepan combine the sweet potatoes, water, sugars, 2 tablespoons of the butter, the vanilla and lemon juice and rind. Cover and cook over medium heat for 30 minutes, stirring occasionally; uncover and cook until potatoes are fork tender, about 10 minutes. Add the remaining butter, stirring until completely melted. Cook uncovered until sauce is thick, about 2 minutes more.
