Fried Parsley

INGREDIENTS:
2 cups curly parsley leaves, stems removed vegetable oil for deep frying



1 Rinse the parsley leaves under cold running water. Spin dry in a salad spinner and roll in a clean dish towel to dry completely.
2 Heat the oil in a deep fryer or wok over medium-high heat to 375 F. Add the parsley and fry until crips but not brown, 20 seconds. Remove with a skimmer and drain on paper towels.
