| 1 head cauliflower | salt, in water to cover | 2 egg yolks |
| 3 tbls butter | 1 tbls bread crumbs | |
| 1 | Divide cauliflower into several medium-sized sections and soak in cold salted water for 15 minutes. Bring water to a boil and cook cauliflower in it until tender, about 10 minutes. Drain and remove carefully so vegetable will not break up. Put on a hot platter. Beat egg yolks and pour over cauliflower. Melt butter and brown bread crumbs lightly in it. Top cauliflower with this and serve. |
