Beans and Bacon (Tocino y Frijoles)

INGREDIENTS:
2 cups pinto beans 1-1/3 quarts water 1 Tbsp salt
1/2 lb bacon, sliced in half-slices 2 tsp oregano flakes 1 garlic clove



1 Inspect beans and remove any dark or broken beans. Rinse beans well under cold water.
2 In a cooking pot, bring water to a fast boil with salt. Add beans, bacon, oregano and garlic clove. Reduce heat to medium and cook until bacon is fully cooked and beans are tender (1 hour, 25 minutes).
