Steaks Fried in Butter

INGREDIENTS:
2 sirloin or rib-eye steaks 1 Tbs vegetable or olive oil 2 Tbs butter
1 Tbs fresh parsley, chopped



1 Using a metal or wooden meat mallet, lightly pound each steak on both sides till it is about 1/2" thick. Season with salt and freshly ground black pepper.
2 Heat the oil in a large frying pan on medium-high heat. Add the butter and let it bubble for a few seconds. The pan should be hot enough to sear the steaks as soon as you put them in. Cook the steaks till golden brown on each side and to the desired doneness (4 to 5 minutes for rare, 6 for medium, 7 to 8 for well-done). Sprinkle on the parsley. Serve with fried potatoes and a salad or green vegetable.
