| 1 2-inch piece fresh ginger, peeled and quartered | 1 garlic clove, peeled | 1/4 cup Chinese sesame paste or tahini |
| 2 tablespoons soy sauce | 2 tablespoons cider vinegar | 1 tablespoon Szechuan chili paste with garlic |
| 1 teaspoon Oriental sesame oil | 1/2 teaspoon salt | 1/2 teaspoon sugar |
| 2 pounds skinless, boneless chicken breasts, poached and shredded | 1/2 head iceberg lettuce, shredded | 3 to 4 scallions, sliced |
| 1 | In a blender, cho ginger and garlic. Add sesame paste, soy sauce, vinegar, chili paste, sesame oil, salt, and sugar and puree. |
| 2 | Put chicken in a large bowl. Add sesame dressing and toss to mix well. |
