Chinese Hacked Chicken

INGREDIENTS:
1 2-inch piece fresh ginger, peeled and quartered 1 garlic clove, peeled 1/4 cup Chinese sesame paste or tahini
2 tablespoons soy sauce 2 tablespoons cider vinegar 1 tablespoon Szechuan chili paste with garlic
1 teaspoon Oriental sesame oil 1/2 teaspoon salt 1/2 teaspoon sugar
2 pounds skinless, boneless chicken breasts, poached and shredded 1/2 head iceberg lettuce, shredded 3 to 4 scallions, sliced



1 In a blender, cho ginger and garlic. Add sesame paste, soy sauce, vinegar, chili paste, sesame oil, salt, and sugar and puree.
2 Put chicken in a large bowl. Add sesame dressing and toss to mix well.
3 Cover a large platter with shredded lettuce. Arrange chicken on top and garnish with scallions. Serve at room temperature or slightly chilled.
