Fresh Cherry Preserves

INGREDIENTS:
2 pounds fresh cherries, pitted, quartered 1/2 cup sugar 1 teaspoon grated lemon peel
1/8 teaspoon ground cloves



1 Combine cherries, sugar, lemon peel and cloves in heavy large saucepan. Cover and cook over medium-low heat until cherries release their juices, sugar dissolves and mixture comes to simmer, stirring occasionally. Uncover and cook until preserves are thickened and reduced to about 2 cups, stirring occasionally, about 35 minutes. Transfer to smaller bowl; cool. Cover and refrigerate up to 1 week.
