Turtle Torte

INGREDIENTS:
2 sticks butter 4 cups pecans, chopped 1 cup sugar
1/2 tsp salt 1 lb bittersweet chocolate 2 cups heavy cream
1/4 cup light corn syrup caramel sauce whole roasted pecans



1 In a 10" spring form pan, spray vegetable oil and line with parchment paper. Set aside.
2 Prepare the nut crust by mixing together 1 stick of melted butter with the pecans, sugar and salt. Bake at 350 for 10 minutes, then cool.
3 In a double boiler, melt the chocolate, 1 stick of butter, cream and corn syrup over low heat. When chocolate mixture has cooled, pour into pecan crust.
4 Cool 8 hours or overnight. Top with caramel sauce and whole roasted pecans before serving.
