| INGREDIENTS: | ||
| 2 sticks butter | 4 cups pecans, chopped | 1 cup sugar |
| 1/2 tsp salt | 1 lb bittersweet chocolate | 2 cups heavy cream |
| 1/4 cup light corn syrup | caramel sauce | whole roasted pecans |
| 1 | In a 10" spring form pan, spray vegetable oil and line with parchment paper. Set aside. |
| 2 | Prepare the nut crust by mixing together 1 stick of melted butter with the pecans, sugar and salt. Bake at 350 for 10 minutes, then cool. |
| 3 | In a double boiler, melt the chocolate, 1 stick of butter, cream and corn syrup over low heat. When chocolate mixture has cooled, pour into pecan crust. |
| 4 | Cool 8 hours or overnight. Top with caramel sauce and whole roasted pecans before serving. |
