| INGREDIENTS: | ||
| 3 cups cauliflowerets | 1/3 cup sweet red pepper, finely chopped | 1 tbsp onion, minced |
| 2 tbsp vinegar | 2 tbsp oil | 1/2 tsp sugar |
| salt, to taste | ||
| 1 | simmer flowerets in salted water until tender/crisp, about 8-10 minutes. Drain and mix with remaining ingredients. Chill and serve with fresh greens. |
