Cauliflower Salad

INGREDIENTS:
3 cups cauliflowerets 1/3 cup sweet red pepper, finely chopped 1 tbsp onion, minced
2 tbsp vinegar 2 tbsp oil 1/2 tsp sugar
salt, to taste



1 simmer flowerets in salted water until tender/crisp, about 8-10 minutes. Drain and mix with remaining ingredients. Chill and serve with fresh greens.
