INGREDIENTS:
2 pounds chowder fish pieces 1 quart court-bouillon 1 cup dry white wine
salt and a few peppercorns 2 tablespoons lemon juice



1 Combine and simmer ingredients about a half hour. Strain. Use a base for sauces for fish and fish chowders and soups.
