| INGREDIENTS: | ||
| 4-oz can portabells, or regular, mushrooms, undrained | 1 small carrot, shredded | 3 Tbsp minced onion |
| 1 Tbsp raisins | pinch of curry powder | pinch of cumin seeds |
| 2 cups flavorful cooked rice or any cooked rice | ||
| 1 | Combine all ingredients except rice. Cover and simmer 3-4 minutes. |
| 2 | Add rice. Cover and place over low heat until heated through. Stir frequently to prevent rice from sticking to bottom of pan. |
