| 2 cups white vinegar | 1 tespoon salt, or to taste | 2 cups minced celery roots |
| 1/4 teaspoon celery seeds | 6 peppercorns | |
| 1 | Combine all ingredients but the celery roots and bring to a boil. Add the celery roots and boil for another 5 minutes. Pour into a sterilized wide-mouthed bottle and seal. Allow the flavors to marry for 2 to 3 weeks. Strain through cheesecloth into a sterilzed pint bottle. |
