Celery Vinegar II

INGREDIENTS:
2 cups white vinegar 1 tespoon salt, or to taste 2 cups minced celery roots
1/4 teaspoon celery seeds 6 peppercorns



1 Combine all ingredients but the celery roots and bring to a boil. Add the celery roots and boil for another 5 minutes. Pour into a sterilized wide-mouthed bottle and seal. Allow the flavors to marry for 2 to 3 weeks. Strain through cheesecloth into a sterilzed pint bottle.
