Pickled Portuguese Roast

INGREDIENTS:
3 to 4 lb roast 2 cloves garlic, crushed 1 T salt
2 T vinegar 3 dried red peppers, crushed and marinated in vinegar 1/2 cup water



1 Mix garlic, salt, vinegar, and water. Marinate meat in mixture for 1/2 hour. Roast meat in marinade at 325 F. Allow 30 minutes per pound. Baste frequently. Serve with pickled white or Maui onions.
