| 1 pound Brussels sprouts, loose outer leaves trimmed, cut in half | 3 tablespoons unsalted butter, divided | Kosher salt and freshly ground pepper to taste |

| 1 | Heat a saucepan over medium heat for a minute. Start with one tablespoons of butter melted in the pan and add Brussels sprouts. Season lightly with salt and pepper toss to coat in butter. |
| 2 | Toss occasionally, making sure sprouts do not burn and begin to brown evenly. Add another tablespoon of butter about every five minutes. Check for seasoning and test doneness when sprouts have rich, carmelized color. Once tender, sprouts a final toss. |
