Salmon in Miso

INGREDIENTS:
2 pounds fresh salmon steaks or fillets 1/2 cup light miso 1 tablespoon sugar
pinch of MSG (optional) 3 scallions, chopped 1 tablespoon soy sauce
1 teaspoon sesame oil 1/2 cup sake



1 Place the steaks in a bowl large enough for marinating. In another bowl, mix the remaining ingredients. Marinate the steaks in this mixture for about 2 hours at room temperature, or in the refrigerator overnight. Grill or boil until done to your own taste.
2 BAKE: You can make this recipe with any other rich-tasting fish such as black cod (sable).
