Green Salad with Pears and Gorgonzola Cheese

INGREDIENTS:
2 Bartlett or Bosc pears with skins on 1/3 cup extra virgin olive oil 2 Tbsps good balsamic vinegar
salt and pepper to taste 1 cup walnuts 1/2 cup honey
3/4 lbs mixed greens 4 oz Gorgonzola cheese



1 Halve each pear and core. Then cut into 1/8" slices. Set aside.
2 FOR THE DRESSING: Combine the olive oil, vinegar, salt and pepper to taste in a small bottle and shake well.
3 Bake the walnut halves at 375 for 15 minutes.
4 In a saute pan, melt the honey and toss in the walnuts while still hot. Spread honeyed walnuts on a cookie sheet to cool.
5 Toss the greens with the dressing.
6 Place 5 pear slices each plate in a star arrangement, with the points of the star touching the rim of the plate. Sprinkle Gorgonzola and honeyed walnuts over the greens and pears.
