Child-Frendly Mexican Fondue

INGREDIENTS:
10 oz/300g old Cheddar cheese, shredded 5 oz/150g sharp processed Cheddar cheese, grated 3 tbsp/45 ml cornstarch
1 cup/250 ml apple cider 2 tsp/10 ml fresh lime juice 1 tbsp/15 ml mild salsa
2 tbsp/25 ml chopped cilantro



1 In a bowl combine old Cheddar, sharp Cheddar and cornstarch; mix well to coat cheese with cornstarch. Set aside.
2 In the top of double boiler set over simmering (not boiling) water, combine apple cider and lime juice; bring to a simmer.
3 Add cheese-cornstarch mixture by handfuls to double boiler, stirring constantly after each addition with a wooden spoon in a figure-eight motion until cheese is melted.
4 Stir in salsa, mixing well. Transfer to fondue pot and garnish with cilantro. Serve immediately.
5 Serve with: taco chips, cubes or cornbread and pumpernickel.
