| INGREDIENTS: | ||
| 1-1/2 cups cubed cooked chicken | 1/3 cup coarsely chopped cashews | 1/3 cup mayonnaise or salad dressing |
| 1/4 cup sliced celery | 2 tablespoons sliced green onions | 3 English muffins, split, toasted |
| 6 (3/4 oz) slices cheddar or American cheese | ||
| 1 | Heat oven to 350 F. In medium bowl, combine all ingredients except muffins and cheese; mix well. |
| 2 | Cut 36x12-inch piece of heavy-duty foil; place on cookie sheet. Place muffin halves on foil; spoon chicken mixture onto muffin halves. Place 1 slice cheese over each. Wrap securely in foil, using double-fold seals (allow space between cheese and top of packet to prevent cheese from sticking). |
