Chicken Nuggets

INGREDIENTS:
1/4 cup/50ml all-purpose flour 1/4 tsp/1 ml garlic powder 2 eggs
1 cup dry breadcrumbs 1/2 tsp/2 ml dry mustard 1/2 tsp/2 ml paprika
1/8 tsp/0.5 ml cayenne pepper 1 lb/500g boneless skinless chicken breasts, cut into 1-inch (2.5 cm) cubes oil for fondue



1 In a large bowl, combine flour with garlic powder and salt and pepper to taste.
2 In a second bowl, beat eggs.
3 In a third bowl, combine breadcrumbs with mustard, paprika and cayenne.
4 Dip chicken cubes one at a time in flour mixture, then egg, then breadcrumbs. Set breaded chicken aside on platter.
5 In a saucepan heat oil to 375 F (190 C) and transfer to fondue pot (or heat oil in an electric fondue). Do not fill fondue pot more than half full.
6 Spear chicken nugget on fondue fork and fondue for 1 to 2 minutes or until golden brown.
