Cinnamon Chip Muffins

INGREDIENTS:
2 cups all-purpose biscuit baking mix 1/4 cup sugar 1 egg
2/3 cup milk 1 cup semi-sweet chocolate chips 1/4 cup finely chopped nuts (optional)
Sugar-Cinnamon Topping



1 Heat oven to 400 F. Grease or paper-line 12 (2-1/2-inch) muffin cups. In large bowl, combine baking mix, sugar, egg and milk. Beat with spoon 30 seconds. Stir in mini chips chocolate and nuts, if desired. Fill muffin cups 3/4 full with batter. Sprinkle each with about 1/2 teaspoon sugar-cinnamon topping. Bake 15 to 17 minutes or until very lightly browned. Serve warm.
2 SUGAR-CINNAMON TOPPING: In small bowl, combine 2 tablespoons sugar and 2 teaspoons ground cinnamon.
