Freeze the steak for 30 minutes. Cook the sesame seeds in a dry pan over medium heat for 3-4 minutes, shaking the pan gently, until seeds are nutty brown; remove from pan. Crush in a food mill or with a mortar and pestle. |

Slice meat into thin strips, cutting across the natural grain. |

Combine the steak, soy sauce, chopped garlic, green onions and half the sesame seeds; mix well; marinate for 2 hours. |

Combine the oils and brush onto a cast-iron skillet, heavy-based frying pan or barbecue plate. Heat to very hot and cook the meat in 3 batches, searing each side for about 1 minute (don't overcook or steak will be chewy). Brush and reheat skillet between batches. Sprinkle with extra crushed sesame seeds. Serve with Kim Chi. |
