Crisp Peanut Butter Cookies

INGREDIENTS:
1 cup sugar 1 cup firmly packed brown sugar 1 cup butter, softened
1 cup creamy peanut butter 2 eggs 1-1/2 teaspoons vanilla
2-3/4 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt



1 Heat oven to 375 F. In large mixer bowl combine sugar, brown sugar, butter and peanut butter. Beat at medium speed, scraping bowl often, until creamy (1 to 2 minutes). Add eggs and vanilla; continue beating until well mixed (1 to 2 minutes).
2 Reduce speed to low; add all remaining ingredients. Beat, scraping bowl often, until well mixed (1 to 2 minutes).
3 Shape dough into 1-inch balls. Place 2 inches apart on cookie sheets; flatten in crisscross pattern with fork. Bake for 9 to 11 minutes or until golden brown. Let stand 1 minute; remove from cookie sheets.
