| INGREDIENTS: | ||
| 3 tablespoons extra virgin olive oil | about 1 lb chicken livers | 1 medium onion, peeled and spiked with 5 cloves |
| 1/2 teaspoon ground allspice | 1/4 teaspoon finely ground black pepper | salt to taste |
| 3 garlic cloves, peeled and crushed | juice of 1 lemon, or to taste | 1 tablespoon of finely chopped fresh coriander |
| 1 | Put the olive oil in a large frying pan and arrange the chicken livers in an even layer in the pan with the cloved onion in the middle. Fry over a medium heat for 3 minutes, turn them over and cook for another 2 minutes. Season with allspice, pepper and salt to taste, then stir in the crushed garlic and lemon juice and take off the heat. Leave to cool slightly, then sprinkle with chopped coriander and serve lukewarm. |
