Caramelized Onion & Herb Relish

INGREDIENTS:
2 tablespoons butter 3 large yellow onions, sliced 1 teaspoon finely chopped fresh sage leaves
1 teaspoon finely chopped fresh thyme leaves 2 teaspoons white wine vinegar 1/2 teaspoon coarsely ground pepper
1/4 teaspoon salt



1 In 12-inch skillet melt butter until sizzling; add onions. Cook over medium heat, stirring occasionally, until onions are tender and deep golden brown (35 to 40 minutes).
2 Stir in all remaining ingredients; continue cooking, stirring occasionally, until caramelized (5 minutes). Serve warm or at room temperature with poultry or meat.
