| 1 egg, lightly beaten | 1/4 teaspoon salt | dash ground pepper |
| 4 veal cutlets (1 pound) | bread crumbs | 2 tablespoons olive oil |
| 4 thin slices ham | 4 slices Mozzarella | |
| 1 | Season beaten egg with salt and pepper. Dip cutlets in egg, then in bread crumbs. Heat olive oil in a large skillet. Brown cutlets on one side, turn over, place a slice of ham on each cutlet and top with a slice of Mozzarella. Cover skillet and cook over medium heat until veal is tender and cheese melts. |
