Veal Cutlets Bolognese

INGREDIENTS:
1 egg, lightly beaten 1/4 teaspoon salt dash ground pepper
4 veal cutlets (1 pound) bread crumbs 2 tablespoons olive oil
4 thin slices ham 4 slices Mozzarella



1 Season beaten egg with salt and pepper. Dip cutlets in egg, then in bread crumbs. Heat olive oil in a large skillet. Brown cutlets on one side, turn over, place a slice of ham on each cutlet and top with a slice of Mozzarella. Cover skillet and cook over medium heat until veal is tender and cheese melts.
