| 1/3 cup grated Parmesan cheese | 3/4 cup bread crumbs | 2 tablespoons minced fresh parsley |
| 2 tablespoons minced chives | salt and pepper to taste | 1 broiler-fryer chicken (about 3 pounds) |

| 1 | Preheat oven to 375 F. Combine Parmesan, cracker crumbs, parsley, chives, salt and pepper. Cut chicken into serving pieces. Dip in milk, then in crumb mixture to coat. Place in shallow baking dish in single layer. Bake, uncovered, 45 minutes or until tender. |
