| INGREDIENTS: | ||
| 1 onion, chopped | 1/2 green pepper, seeded and chopped | 3 tablespoons butter |
| 2 cups finely minced or ground cooked chicken | 1/3 cup bread crumbs | 2 cups Ricotta |
| 1/4 teaspoon oregano | salt and pepper to taste | 3 eggs |
| 1 | Preheat oven to 375F. In a large saucepan, saute onion and pepper in butter until tender. Remove from heat and combine with chicken and bread crumbs. Spread in bottom of rectangular 1-1/2 quart baking dish. Combine ricotta with oregano, salt and pepper. Add eggs to ricotta, one at a time, beating after each addition. Pour over chicken and bake, uncovered, 40 minutes. |
