INGREDIENTS:
1 onion, chopped 1/2 green pepper, seeded and chopped 3 tablespoons butter
2 cups finely minced or ground cooked chicken 1/3 cup bread crumbs 2 cups Ricotta
1/4 teaspoon oregano salt and pepper to taste 3 eggs



1 Preheat oven to 375F. In a large saucepan, saute onion and pepper in butter until tender. Remove from heat and combine with chicken and bread crumbs. Spread in bottom of rectangular 1-1/2 quart baking dish. Combine ricotta with oregano, salt and pepper. Add eggs to ricotta, one at a time, beating after each addition. Pour over chicken and bake, uncovered, 40 minutes.
