Quince Stew

INGREDIENTS:
6 quince 1-1/2 lbs ground round 1/4 green pepper, chopped
1/4 C chppped parsley 1/2 tsp salt 1/4 tsp ground allspice
2 C boiling water juice of 1 lemon 1 T sugar



1 Wash, peel and core quince. Cut into eighths and set aside. Combine meat, green pepper, parsley, salt and allspice in large bowl. Mix until well combined. Form into 2-3" small sausages. Alternate layers of meat and quince in ovenproof baking dish, ending with quince. Combine boiling water, lemon juice and sugar and pour over top. Cover and cook over low heat on stove top until quince is softened. Remove from stove-top and place in oven. Bake, uncovered, at 350 45 minutes longer or until browned.
